Curried Grilled chicken Breast and Mango Caesar Salad
Someone say spring chicken? in my latest youtube video, I shared some of my easy meals and this chicken salad went down a treat with my subbies. So here’s the recipe. This recipe is inspired by the BBC’s food version I saw on tv but mine’s much more simple and quicker too!
100g Chicken breast
1 tsp olive oil
2 tsp curry powder
4 tbsp Greek yoghurt
2 tbsp mango chutney
zest of ½ a lime and 2 tsp juice
1 baby gem lettuce, leaves separated
1/2 ripe mango, peeled and sliced

Light, filling, healthy and ohhh so satisfying! So here’s how to:
In a large bowl mix the oil and 1 tsp of the curry powder. Toss the chicken in the mixture and mix well making sure the chicken is well coated.
Heat a frying pan and lightly pan fry the chicken
To make the dressing:
Mix the remaining curry powder with the yoghurt, chutney, lime zest and lime juice (add a teeny bit of water if the dressing is too thick). Soooo EASY!
Right! Time to serve! Arrange the lettuce leaves on 2 plates. Top with the mango and cooked chicken, then drizzle with the dressing. Add some sesame and pumpkin seeds to the mix before serving.
