Oh the good eats! Who says healthy food has to be bland and boring? Here’s a hearty soup to melt the last of those winter chills and welcome spring! This soup comes directly from my Caribbean roots so you know it’s packed with flavour and mouth watering deliciousness! The best part is it’s pretty easy! Here’s how:

Ingredients

650g Diced beef
2 crushed garlic cloves
1 sprig of celery (chopped)
1 sprig parsley (chopped)
1tsp thyme or few springs fresh
1 medium pumpkin
2 tsp salt
1 onion chopped
1 lb mixed root vegetables (potatoes, carrots)
6 cups water
½ cup plain flour
½ cup wholemeal flour
1 1/2 tsp sugar
1 packet grace/Maggi pumpkin soup mix
1 tsp pepper

Method


Place the meat in a pot add onions, garlic cloves, thyme, a dash of black pepper and enough water to cover the meat. Then add 2-3 extra cups of water. Stew on a low-medium heat until meat is cooked. (usually about 25 minutes)

While the meat is stewing, chop and gut the pumpkin,
then pop the pieces in a large stock pot and place to boil

While those two are busy boiling away,
roughly chop your potatoes and carrots and put them aside for later… Dumplings next!

Add 1tsp salt and 2tsp sugar to a cup of warm water

Add the water mixture to the flour and knead into a dough,
let it rest while you continue with the rest of the meal prep.

Once the pumpkin is cooked and cooled, peel and discard the skin and mash the pumpkin.

Next add the liquid from the stew beef to the mashed pumpkin stir until they combine.

Add the magic ingredient…Grace Pumpkin Soup Mix!Next add the carrots and then the meat to the stock pot.
Back to the dumplings! Roll into small plum sized balls and plop them in one at a time. Then give the pot a quick stir.

Next add your potatoes, Parsley Thyme and Celery.

Give the pot a quick stir and let the soup simmer on low/medium heat for a further 20-30 minutes stirring occasionally. Add Salt to taste. (optional)

You can use this soup as one of your 5-6 meals a day for weight loss. You can even freeze it in single serving batches and defrost for those times you need some feel good healthy comfort food. Your only problem will be trying not to it all in one go!
